I bake lots of gluten free cakes and cupcakes as my husband is gluten intolerant so here is a recipe for my cupcakes :) Don’t be put off them being gluten free! They taste better than normal cupcakes. Honestly! I used Doves Farm self raising gluten free flour and it is widely available at every supermarket. The baking powder is Doves Farm gluten free as well.
Gluten free Vanilla cupcakes
Makes 12(depending on your cases, around 10 for the big cases)
115g gluten free self raising flour
5 tbsp milk
1/2 tsp gluten free baking powder(mix with your flour)
I do it all in one but I mix quickly by hand the sugar ,margarine and vanilla. Then I add milk and eggs and quickly mix to just get it incorporated and then I sift flour and the baking powder and mix it with the hand held mixer until all mixed and uniform.Do not mix for too long as you might overmix which will give you rubbery and soggy cupcakes. I bake at 170 fan assisted oven for about 15min. Insert a toothpick or the wooden skewers to check if they are done.
You can replace the Vanilla and add lemon juice and zest for lemon cupcakes
Or replace the vanilla with any flavourings you want.
You can make chocolate cupcakes by adding melted dark chocolate or replacing a few tablespoons of the flour with good quality cocoa powder.
